Hydroxyl radical can’t be removed by reaction of enzyme mechanism, because this mechanism requires diffusion. This action is more slow than seperated cycle of this radical, so it can oxygenate any compounds in neighborhood, then it can damage almost high weight molerculars: carbohydrates, nucleic acids (causing mutations), lipids (peroxide lipid) and amino acids (transfer phenylalanine to m-tyrosine and o-tyrosine). The antioxidants such as Vitamin C, Vitamin E… can’t control hydroxyl radical (OH). Inhibit the multiplication of free radical play the import role in anti-aging.
Lactoferrin is a rich iron molecular, it has ion Fe 3+ and Fe 2+, in Fenton reaction (reaction to create hydroxyl radical), Fe2+ and Cu+ are strong catalysts creat free radical. Lactoferrin remove these catalysts by inhibit iron in Fenton reaction and creation of hydroxyl radical.
